Forthem Campus – Courses offer

These courses take place during the 1st year of preparation for the National Diploma in Oenology (equivalent to the 1st year Master’s degree).
Period: October – January
Courses given in French – documents (course materials, tutorial exercises) can be translated into English.

MOF: Microorganism and Fermentation : 60 H lectures / 18 H tutorials / 24 H practical
– Winemaking yeasts – cytology, metabolism, growth parameters, identification
– Lactic bacteria in musts and wines: cytology, metabolism, growth parameter, their use inwinemaking, identification
– Spoilage yeasts and bacteria

WT: Winemaking Techniques : 60 H lectures /18 H tutorials / 24 H practical
– White winemaking: from harvest to prefermentative steps and alcoholic fermentation
– Red winemaking: from harvest to prefermentative steps and alcoholic fermentation
– Special winemaking: Sparkling wines, Sweet wines and Rosé wines
– Physical practices to manage wine composition
